Best Granola Ever (home-made)

This granola is so addicting and so much cheaper to make than to buy.  Thanks to our chef at school (Jordan Hunsecker) for turning me on to this home-made granola recipe!

Pour 4 cups of oats (not quick-cooking) into a bowl.  Add and mix in 1 TBS of canola oil, 1 TSP of vanilla, 1 TSP of cinnamon, 2 TBS of honey.

Line a baking sheet with parchment paper. Bake on 350 for 25 minutes (convection if you have it) – or until light brown in color.

Pour mixture back into the mixing bowl and add:

  • ¾ cup of any assortment of cut-up dried fruits (berries, cherries, raisins – I added some Mixed Dried Fruit)
  • ¼ cup of coconut, ¼ cup of brown sugar and 2 more TBS of honey (I added 1 TBS of Molasses too)
  • Bake on 350 for another 15 minutes.  Let it cool in the pan.  Add chocolate chips if you want.  ENJOY!

How Can the Kids Help?
